Vineyard Haven Lobster Bake

Summer is finally here! Time for a New England lobster bake featuring the Maine ingredient, live lobsters. But you don’t have to fight beach traffic or dig a big hole in your backyard for this lobster bake version.

LOBSTER BAKE INGREDIENTS

4 dozen steamer clams
fresh seaweed
6 potatoes, skin on
6 ears of corn with the husk on
6 medium whole onions
melted or drawn butter
6 sausages
6 live lobsters, about 1 ¼ lb. each.

1.Fill the bottom of pot with 6 inches of wet seaweed.

2.Divide the steamers among 6 pieces of cheesecloth and tie corners so you can pick them up. Place on seaweed.

3.Remove silk and all but two layers of corn husk from the corn. Place corn, potatoes, onions and sausage over the clams in that order. Top off with the lobsters. Put a layer of cheesecloth over the lobsters and cover with another 4 inches of seaweed.

4.Cover closely and place pot over high heat. When steaming begins, reduce heat to medium and cook for one hour and 15 minutes.

Serve with hot crusty bread and melted butter.

Lobster Quiche Straight from the Captain’s Quarters

LOBSTER QUICHE

(with fiddleheads when in season)

Preheat oven to 350 degrees.

Bake pie crust on bottom shelf of oven while preparing the filling.

In large pan, melt: ½ cup butter

Sauté quickly: 2 tablespoons freshly chopped garlic

1 ½ cups dry French bread slices, cut into ½ inch pieces

Meat from 2 lobsters, cut into 1 inch pieces

Whisk together: 6 eggs & ½ cup light cream

Salt, pepper, parsley, chives & thyme to taste

Remove partially baked pie crust from the oven and spread sautéed ingredients into it.

Top with ½ cup parboiled fiddleheads, when in season.

Top with ½ cup parmesan cheese.

Pour egg mixture over and bake 1 hour.

Just Roll With It: Lobster Rolls and Relaxation in Ogunquit, Maine

marginalwaybeach1 200x300 Just Roll With It:  Lobster Rolls and Relaxation in Ogunquit, MaineSummer is finally here- thank goodness.  There’s nothing better than relaxing in the sunshine and enjoying some delicious seafood!  So get outside and enjoy some good company and good food.  Our friends at the Ogunquit Beach Inn provided us with this great lobster roll recipe.  Legendary amongst their family and friends, we think you’ll enjoy this lobster roll too!

The secret to a great tasting Maine lobster roll  starts with fresh  Maine lobster. Boil several lobsters, then let them cool.  Crack open the lobsters and use the best meat: tail and claws.  We don’t use the knuckles for our lobster rolls, we use only the best part of the lobstah!

Here is what you will need:

5 or 6 lobsters
3 heaping tablespoons of Hellmann’s or Cains mayonnaise
2 sticks of celery chopped finely
2 dashes of sea salt or kosher salt
dash of  pepper
1  dash of paprika
New England style hot dog rolls
1/4 cup unsalted butter, melted

1. Mix all ingredients, except the butter and hotdog rolls; keep chilled until ready to use.
2. Brush unsalted butter on each side of hotdog roll and grill in pan or on barbecue.
3. Split the hotdog rolls (but not all the way through the bread) and fill with the lobster mix.

Serve with chips, pickle slice and coleslaw.  Best to enjoy outside on a beautiful day!

The World’s Finest Peanut Butter Chocolate Cookies in Freeport, Maine

Flourless Peanut Butter Chocolate Chip Cookies

Ingredients:
1 cup firmly packed brown sugar
1 cup smooth peanut butter (chunky may be used if preferred, but it
tends to be more dry than smooth peanut butter)
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup milk chocolate chips (or morsels)

1. Stir together all except the chocolate chips (or morsels) in medium
bowl, using a wooden spoon. Stir in chocolate chips/morsels after the
others are well mixed.

2. Drop cookie dough by rounded tablespoonfuls onto a parchment paper-
lined baking sheet

3. Bake at 350 F for 12 minutes or until puffed and golden (Cookies
should still be soft in the center). Cool on baking sheet 5 minutes,
remove to wire rack.

Enjoy!
